Ingredients
- 1/3c white sugar
- 2/3c brown sugar
- ¼c butter, softened
- 2 eggs, well beaten
- 1 tsp vanilla extract
- 2 tsp baking powder
- 1/3c milk
- 1 large apple, peeled & chopped
- 1 tbsp butter, melted
- ½ tbsp ground cinnamon
- ¼c applesauce (you can use ½ c butter instead and skip the sauce)
- 1½c all-purpose flour
Directions
- Preheat the oven to 350 degrees Fahrenheit. Grease & flour an 8×4 loaf pan
- Combine 1/3c brown sugar with cinnamon in small bowl, set aside
- With mixer on medium, cream white sugar & remaining brown sugar with butter until fluffy. Mix in applesauce, beaten eggs, and vanilla
- Stir together flour & baking powder. Add flour to egg mixture along with milk & stir just until combined. Do not overmix.
- Pour half the batter into the greased/floured pan. Sprinkle with ½ the apples and ½ the cinnamon mixture
- Stir the remaining apples into the remaining batter and pour into the pan. Top with remaining cinnamon mixture
- Bake approximately 40 minutes. Brush topping with melted butter. Continue baking an additional 5-10 minutes or until toothpick comes out clean
- Let cool 10 minutes and remove from pan
