Ingredients

  • 1 pie crust
  • 3 pounds apples, sliced
  • 2 Tbsp lemon juice
  • 2/3c sugar, plus more for sprinkling on the pie
  • 1/4 Tsp ground cinnamon
  • generous pinch of ground nutmeg
  • 1/4c unsalted butter
  • 3/4c granulated sugar
  • 1/4c light brown sugar, loosely measured
  • 2 Tsp vanilla extract
  • 1 Tsp cinnamon
  • 1/4 Tsp allspice
  • 1/4 Tsp ground cloves
  • 3/4c all purpose flour
  • 3/4c rolled oats
  • 1 large egg
  • 1 1/2c flour
  • 3/4c granulated sugar
  • 3/4c light brown sugar, packed
  • 1/2 Tsp salt
  • 1c rolled oats
  • 2 sticks unsalted butter, diced

Directions

  1. Preheat oven to 375F
  2. Make pie filling: Add apples, lemon juice, 1/4 tsp cinnamon, nutmeg, and butter in large skillet.  Cook on medium 5-7 minutes or until apples are just wilted and have released their juices.  Place apples in a bowl but be sure to keep juices in skillet.  Cook juices down into a syrup (like honey).  Add 3/4c sugar, 1/4c brown sugar, 2 tsp vanilla, 1 tsp cinnamon, 1/4 tsp allspice, 1/4 tsp cloves, 3/4c flour, 3/4c rolled oats, and egg and mix well.  Return apples to mixture.  Add to pie crust.
  3. Make the crumble: Combine 1 1/2c flour, 3/4c sugar, 3/4c brown sugar, 1/2 tsp salt, 1c rolled oats, and 2 sticks butter and mash together into small clusters.  Add crumble to top of filling.
  4. Bake 50 minutes & enjoy
