Ingredients

  • 2 sweet potatoes
  • 1/3c BBQ sauce
  • 4 skinless, boneless chicken breasts
  • 3 apples
  • 1 Tbsp lemon juice
  • 1 Tbsp coconut sugar {optional}
  •  8 slices bacon {turkey, if desired}
  • 1 Tbsp fresh parsley, for garnish

Directions

  1. Skin sweet potatoes & slice into half moons.
  2. Lightly grease bottom of large slow cooker then add sweet potatoes.
  3. Seed & dice apples
  4.  Combine BBQ sauce, lemon juice, and coconut sugar in a medium bowl and mix.  Once fully incorporated, stir in apples.
  5.  Slice bacon strips in half {lengthwise} to create 16 and wrap each chicken breast with 4.  Place in slow cooker on top on sweet potatoes.
  6.  Top chicken with BBQ-apple mixture.
  7.  Cover & cook on low 4-6 hours.
