Ingredients

  • 2c white onion (quartered and separated)
  • 1.5-2.5 lbs boneless pork chops or county style ribs
  • 1/4-1/2c balsamic vinegar
  • 1/4-1/2c brown sugar (optional)
  • 1/2c apple juice or apple cider
  • salt and pepper to taste
  • 2c fresh or frozen cranberries
  • 2-4c apple slices ½ inch thick

Directions

Lightly oil your crock pot to make cleanup easier

  1. Place onions in the bottom of your crockpot
  2. Layer cranberries on top
  3. Add pork over cranberries
  4. Combine balsamic vinegar and apple cider, pour over pork.  (For a milder flavor combine the vinegar with brown sugar and mix with apple cider then add to crock pot.)  Sprinkle salt & pepper lightly.
  5. Cook for 4-6 hours on low
  6. Add apples and cook until tender (about 40 minutes)
  7. Once pork reaches an internal temperature of 145, remove pork.  Remove apples, cranberries, and some onion
  8. Use an immersion blender to puree what’s left of the onions and sauce
  9. Serve with rice, mashed potatoes, or sweet potatoes
