Ingredients
- 2 sweet potatoes
- 1/3c BBQ sauce
- 4 skinless, boneless chicken breasts
- 3 apples
- 1 Tbsp lemon juice
- 1 Tbsp coconut sugar {optional}
- 8 slices bacon {turkey, if desired}
- 1 Tbsp fresh parsley, for garnish
Directions
- Skin sweet potatoes & slice into half moons.
- Lightly grease bottom of large slow cooker then add sweet potatoes.
- Seed & dice apples
- Combine BBQ sauce, lemon juice, and coconut sugar in a medium bowl and mix. Once fully incorporated, stir in apples.
- Slice bacon strips in half {lengthwise} to create 16 and wrap each chicken breast with 4. Place in slow cooker on top on sweet potatoes.
- Top chicken with BBQ-apple mixture.
- Cover & cook on low 4-6 hours.
