Ingredients
- 3/4c all purpose flour
- 3/4c whole meal flour
- 1 1/2t baking powder
- 1/4c coconut sugar {or any unrefined sugar}
- 1/4c applesauce
- 1/2c shredded coconut
- 1 Tbsp ground flaxseed
- 3 Tbsp water
- 2 Tbsp sunflower oil
- 1 1/2c almond milk
- 1 Tbsp ground cinnamon
- 1 tsp vanilla extract
- 1 tsp corn flour
- sea salt
Directions
- Stir flaxseed powder and water together.
- Sift flours, corn flour, and baking powder into a bowl.
- In separate bowl, whisk together applesaucw, vanilla, coconut, sunflower oil, almond milk, cinnamon, sugar, flax egg mixture, and salt until combined.
- Add wet ingredients to dry and fold only until just combined. Don’t overwork the batter.
- Allow batter to sit for 5 minutes.
- Turn on waffle iron to heat. Turn on oven to a low heat.
- Spoon batter into waffle iron in batches {cooking for about 5-7 minutes or until slightly crispy}. Keep cooked waffles warm in the oven while cooking the remaining batter.
- Serve with maple syrup and sliced apples. Sprinkle nuts and coconut, if desired, or ice cream for a dessert-like treat.
