Ingredients
- 2c white onion (quartered and separated)
 - 1.5-2.5 lbs boneless pork chops or county style ribs
 - 1/4-1/2c balsamic vinegar
 - 1/4-1/2c brown sugar (optional)
 - 1/2c apple juice or apple cider
 - salt and pepper to taste
 - 2c fresh or frozen cranberries
 - 2-4c apple slices ½ inch thick
 
Directions
Lightly oil your crock pot to make cleanup easier
- Place onions in the bottom of your crockpot
 - Layer cranberries on top
 - Add pork over cranberries
 - Combine balsamic vinegar and apple cider, pour over pork. (For a milder flavor combine the vinegar with brown sugar and mix with apple cider then add to crock pot.) Sprinkle salt & pepper lightly.
 - Cook for 4-6 hours on low
 - Add apples and cook until tender (about 40 minutes)
 - Once pork reaches an internal temperature of 145, remove pork. Remove apples, cranberries, and some onion
 - Use an immersion blender to puree what’s left of the onions and sauce
 - Serve with rice, mashed potatoes, or sweet potatoes
