Ingredients:

  • 3-4 large apples, peeled & sliced into 8 wedges/apple {HoneyCrisp was recommended but you choose which flavor you like best}
  • 3/4c sugar
  • 2 large eggs
  • 1 tsp. pure vanilla extract
  • 2 sticks unsalted butter
  • 1c honey
  • 3/4c buttermilk
  • 1/2c dark brown sugar, packed
  • 2c all-purpose flour
  • 2 tsp salt
  • 1 tsp ground cinnamon
  • 1 tsp freshly grated nutmeg
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • cooking spray, crisco, butter, etc for greasing
  • whipped cream {optional}

Instructions:

  1. Preheat oven to 350° F. Line a high-sided 9″ round cake pan with parchment {cut to fit} then grease.
  2. Line the bottom of the prepared pan with apple wedges, arranging them in circles and fit slices in center of pan too.
  3. In a saucepan, combine granulated sugar with 3 TBS water.  Cook over med-high heat, shaking the pan as needed, until caramel forms {about 7 minutes}.  Immediately pour caramel over the apples in an even layer.
  4. In another saucepan, melt butter over medium heat.  Cook, stirring constantly, until browned & nutty in aroma {about 7 minutes}.  Pout into heatproof bowl & let cool slightly.  Whisk in honey, buttermilk, eggs, brown sugar, and vanilla until smooth.
  5. In a medium bowl, whisk together flour, salt, cinnamon, nutmeg, baking powder, baking soda to combine.  Add dry ingredients to the wet and fold just until incorporated.
  6. Pour batter over the caramel coated apples.
  7. Bake 60-70 minutes, until the top is golden and center tests done with a toothpick.
  8. Let cool {in the pan} for 15 minutes then run a knife around the edge of the pan to loosen cake.  Place a plate over the cake pan, invert them together, then lift off the pan & remove parchment paper.
  9. Top with whipped cream & drizzle with honey {if desired}.
