• 3 Eggs
  • 1 1/2 cups Sugar
  • 2 tsp Vanilla
  • 3/4 tsp Salt
  • 3 tsp Baking Powder
  • 1 1/2 cups Flour
  • 3 cups Apples peeled & diced


  1. Add eggs to a mixing bowl and lightly beat (by hand)
  2. Add sugar and vanilla and mix well
  3. Add salt, baking powder and mix well
  4. Add flour, mix well, but do not over mix
  5. Gently fold in the diced apples
  6. Evenly divide the batter between two 9″ greased pie pans making sure it covers the entire bottom of each pie pans
  7. Bake at 350 for 30 minutes

This pie will be lightly crisp on top at first, and will soften up and get moister the longer it sits. For that reason, we eat it within a day or two as we don’t like it to be too moist.
