Ingredients

  • 3/4c all purpose flour
  •  3/4c whole meal flour
  •  1 1/2t baking powder
  •  1/4c coconut sugar {or any unrefined sugar}
  •  1/4c applesauce
  •  1/2c shredded coconut
  •  1 Tbsp ground flaxseed
  •  3 Tbsp water
  •  2 Tbsp sunflower oil
  •  1 1/2c almond milk
  •  1 Tbsp ground cinnamon
  •  1 tsp vanilla extract
  •  1 tsp corn flour
  •  sea salt

Directions

  1. Stir flaxseed powder and water together.
  2. Sift flours, corn flour, and baking powder into a bowl.
  3. In separate bowl, whisk together applesaucw, vanilla, coconut, sunflower oil, almond milk, cinnamon, sugar, flax egg mixture, and salt until combined.
  4. Add wet ingredients to dry and fold only until just combined.  Don’t overwork the batter.
  5.  Allow batter to sit for 5 minutes.
  6.  Turn on waffle iron to heat.  Turn on oven to a low heat.
  7.  Spoon batter into waffle iron in batches {cooking for about 5-7 minutes or until slightly crispy}.  Keep cooked waffles warm in the oven while cooking the remaining batter.
  8.  Serve with maple syrup and sliced apples.  Sprinkle nuts and coconut, if desired, or ice cream for a dessert-like treat.
