• 1c candied walnuts
  • 2 large Honeycrisp apples, peeled & sliced into thin matchsticks
  • your favorite salad mix OR
  • 4c arugula and 2 heads firsee cut into bite-size pieces
  • 1/4c plus 2 Tbsp apple cider vinegar
  •  2 1/2 Tbsp honey
  •  2 Tbsp walnuts, lightly chopped {candied or plain}
  •  1/4t cinnamon
  •  1/4t black pepper
  •  1/4t plus a pinch salt
  •  pinch cumin
  •  pinch curry powder
  •  1/2c plus 2 Tbsp olive oil


  1. Place all dressing ingredients except oil into a food processor and process until everything is well combined and smooth.  Slowly drizzle in oil while processor is running and process until well emulsified and blended.
  2. Add firsee, arugula, walnuts, and half the matchstick apples to large bowl then lightly drizzle dressing and toss.  Plate salad and add remaining apples and dressing vinaigrette to each portion.
