Ingredients
- 11 oz all purpose flour
- 1 tsp baking powder
- 4 oz sugar
- 5 oz butter, room temperature
- 1 tsp vanilla extract
- 1 egg
- 2 pounds apples
- 1 lemon, juiced
- 2 2/3c Riesling, use apple cider if you want an alcohol-free cake
- 3 oz cornstarch
Directions
- Place the flour and baking powder in bowl
- Mix butter, half sugar, and egg and combine with dry ingredients. Knead until combined. Let dough rest 30 minutes in cool place
- Peel apples and cut into small cubes. Sprinkle with lemon juice
- Mix 1/3 wine with cornstarch and vanilla & stir until smooth
- Bring the rest of the wine (or cider) and sugar to a boil, stir constantly. When bubbling, add the starch mix and boil again. Cool.
- Preheat oven to 350F and grease spring form pan
- Press prepared dough into bottom of pan. Prick the dough several times with a fork
- Spread the apples and pour glaze over so apples are fully covered
- Bake for 90 minutes
- Cool overnight or at least a few hours
