Ingredients

  • 11 oz all purpose flour
  • 1 tsp baking powder
  • 4 oz sugar
  • 5 oz butter, room temperature
  • 1 tsp vanilla extract
  • 1 egg
  • 2 pounds apples
  • 1 lemon, juiced
  • 2 2/3c Riesling, use apple cider if you want an alcohol-free cake
  • 3 oz cornstarch

Directions

  1. Place the flour and baking powder in bowl
  2. Mix butter, half sugar, and egg and combine with dry ingredients.  Knead until combined.  Let dough rest 30 minutes in cool place
  3. Peel apples and cut into small cubes.  Sprinkle with lemon juice
  4. Mix 1/3 wine with cornstarch and vanilla & stir until smooth
  5. Bring the rest of the wine (or cider) and sugar to a boil, stir constantly.  When bubbling, add the starch mix and boil again.  Cool.
  6. Preheat oven to 350F and grease spring form pan
  7. Press prepared dough into bottom of pan.  Prick the dough several times with a fork
  8. Spread the apples and pour glaze over so apples are fully covered
  9. Bake for 90 minutes
  10. Cool overnight or at least a few hours
